Harris is the author of a number of good cookbooks, including Iron Pots and Wooden Spoons: Africa''s Gifts to New World Cooking (LJ 5/15/89), in some ways the forerunner of this one. Here she presents African American recipes of all sorts, from slave cooking, the source of many classic Southern dishes, to the family favorites she grew up with to her own sophisticated reinterpretations or inventions. Headnotes are readable and informative, providing culinary and cultural background and more; reminiscences from different cooks (and some noncooks) open the various chapters. Angela Medearis''s The African-American Kitchen (LJ 8/84) offers a similar, somewhat more personal look at this culinary tradition, but Harris''s thoroughly researched book is the essential purchase.

If Harris'' more than 200 recipes don''t appeal at first, her detailed historical introduction and the interviews launching each chapter will initially attract readers. i was dismayed to read in this cookbook/memoir that the author, miss harris, is a vegetarian. while i do not decry anyone''s right to that lifestyle, i just found it unsettling that she does not eat the ''''carnivorian'''' dishes included in the book. if being a vegetarian has made her a healthy person, as she claims, then it would be more sincere for her to pen a vegetarian cookbook, i think. in my estimation, she''s intimating that she''s more healthy than the people who might cook/eat the receipts included in her book.

The WELCOME TABLE : African-American Heritage Cooking I absolutely love this cookbook. It arrived in mint condition,especially for a used, paperback.The cover is in color,but the recipes are in black and white. I like the fact that each recipe gives information about it''s origin. The cookbook also defines the ingredients i.e.poultry seasoning. It also tells you where African American restaurants are located around the country. Lastly, it includes local and mail order sources i.e. Andouille sausage,and black walnuts. It was published in 1995, so some information may be obsolete. Regardless this cookbook is a must have for anyone''s collection.
